Organic crystalline grape sugar -Organic solidified concentrated grape must from wine grapes*

It represents the naturally occurring sugar complex in grape must, consisting of glucose (approx. 50%) and fructose (approx. 50%).

* The product can be used as an organic ingredient in the food industry, as expressly indicated in the circular of the MIPAAF of 6 June 2012 (on the use of ion exchange resins in organic farming) which states that “organic wine products (including rectified concentrated must or “grape sugar”), produced in accordance with the provisions of Reg. 889/08 and 203/2012, when used as an ingredient in other processes, are to be considered organic products”.

Sweetness

The combination of the two crystallised sugars (dextrose and fructose) helps to achieve an ideal sweetness profile, with a sweetness comparable to that of sucrose (POD = 100%)

Main functions
  • High hygroscopicity and wetting effect
  • Improves structure and has an anti-crystallisation effect
  • Synergy between the humectant properties of fructose and the reducing properties of dextrose
  • Combined energy function of dextrose (immediate energy source) and fructose (slower-release energy source)
  • Use in enrichment: 1 kg of MCRS (Volume = 0.66 litres) develops 0.5943 litres of alcohol → 1.68 kg of MCRS increase 100 litres of wine by 1 degree of alcohol
  • Use in fermentation: To raise 1 atm (~1L CO2/L) 1 litre of wine, 4 g of MCRS are needed
